Back in the saddle.
Time to get back into the swing after 4 months gone on the road. Started 4 last night. 3 chefs knives and 1 hunter with the remainder of the Damascus billet. The 2 chefs knives are from 154cm. The Damascus is from Alabama Damascus. Got 3 of them rough ground last night. Did a quick etch to see how the Damascus chefs knife would look.

Those are looking good. What are you going to put on them for handles?

Really nice. You might consider making one of the chef's as a stub tang. The advantages for a chef's knife is fewer places for liquids and bacteria to find a place to hide. If you use a fancy stabilized wood a stub tang really shows off the wood better than scales ...

Those are beautiful scales, Ricky. But, think of that same wood in a block and how it would look as a handle with wood where the steel tang is now - more canvas for the wood's artwork.
Some of that wood looks like it might be ironwood. I've used ironwood on several chef's knives even though I prefer to use stabilized wood (especially on chef's knives). Most of the time it was no problem but once, in a commercial kitchen, the ironwood developed a white mold. No matter how many times the chef cleaned it off it always came back. Last time I used ironwood on a chef's knife or any non-stabilized natural material .... |

Progress.
RAY, I can't find your dvd anywhere. I lost it somehow and need to order another copy. So I didn't change any of these to stick tang knives. But I have the bolsters for all 3 done and this one is heat treated and etched. I'll heat treat the 2 stainless ones tomorrow. |

Good to see you back Ricky.
Trying to figure out the big "rush" on chef's knives this year. I've gotten out close to 30 since Blade Show in June.
