Phil,
Experiment a bit with the temperature. I suspect that oven thermometers are far from precise.
I got a nice gold at 500 degrees and it progressed up to darker bronze tones at 550.
Doing all the parts together (except the blade, of course) results in uniform coloration. Make sure the parts are clean, without any oil or even fingerprint marks.
