Help me choose a handle material.....

Hey guys so I'm working on a project for another auction. Its for a beefmaster cattle organization my stepdad is in, I believe its called the Lone Star Beefmaster Breeders organization or something like that. If I can get it done, they want a symbol burnt into the handle for the auction. My question for everyone here is what wood would look good with a star burnt into it. Its also going to have copper/stainless combination mosaic pins in the handle. Any input y'all can give me is much appreciated. In the picture it's the larger knife on bottom.

Maple is usually the wood of choice when it comes to heat coloring, wire inlay, or burning patterns ...

You ever saw beefwood. Looks like a steak. Neat stuff. Don't know how it would take to branding though. Some woods are real sensitive to that kind of thing.

Lonestar cattle company , has to be Texas Mesquite !!!
Will brand nicely , but I would maybe opt for a laser etch , be a nice sharp looking burn

Thanks for the replies guys. I think I'm gonna go with the mesquite since I have some pins that go really nicely with it.
