I see that west system offers 3 different hardeners. A 205,206, and 207 which one should I order?
Thanks

Ive been tempted try myself and I was told 205 but I dont know for certain, the difference in cost over other proven epoxies is a tough pill to swallow

I don't use West Systems myself but I can do an internet search (and so can you). The West Systems website says 205 is for marine applications - waterproof, won't break down in sunlight, etc which is exactly what we want for knives. 205 has good pot life and cures in a few hours.
206 is the fast cure hardener. Cures faster, shorter pot life, good stuff but not as good a result for us as 205 would be.
207 is intended for curing coatings for fiberglass cloth, not for us at all.
So, like Rob said, its 205 all the way ....

I've been using the 205 for over a year now and am very pleased with it.

Troy,
There wouldn't be any obvious issues right away with 206. But, according to the West Systems website, 206 sets up faster but not as strong as the slower 205. That's the reason they make more than one hardener but each hardener has trade offs. Where knives are concerned you might never notice any difference just because the glue is a little weaker since we don't use the glue to actually hold the knife together. Still, unless you're in a terrible hurry the 205 would be a better choice .......
