I think the ones that contain GA provide useful information to anyone trying to find out how to contact SPRY Knives (as in potential customers). The size of the mark is best related to the size of the knife it appears on, for that reason I use two different sizes of the same logo. Also, stencils with extremely small and fine detail wear out faster that logos with bolder lines and letters so keep that in mind when deciding how much tiny detail you want in your logo ....

I'm thinking the GA logo. It's already evident that you make knives and what they're looking at is a knife so the knife in the logo isn' t necessary. Info that identifies the maker seems more relevant to me especially if someone is trying to identify you as the maker in years to come. You never know when another maker might have the same name.
