Denim Micatra Chef Knives

Finished these up not a moment too soon. My doctor ordered these two as xmas gifts, and I will be handing them over in about 45 minutes from now.

The steel is Aldo's 1084 1/8" X 2"
Cutting edge is a hair over 8" OAL is 12 1/2"
Hand sanded to 800 grit.
Linen micarta handles, he specified University of Michigan colored micarta. I usully use denim but I found a bunch of linen on sale in the right colors.
I used square, and round tube brass and acarglas to make the 1/4" mosaic pins

I have never thought of taking out the plunge lines. It would make things a lot easier to hand sand. These were my second and third attempts at making chefs knives, ill have to go plunge less on number 4.

FYI the client was ecstatic to get them. Come to find out one was for his son who is a chef. It will be nice to recieve feedback from someone who uses them on a daily basis.

You out did yourself. My thought when I read denim and kitchen knife was "what the..?" But they work beautifully. Very nice!

Thanks for the compliments everyone. Friday I will start on the wives cake knife, which is basically a chef knife that I call a cake knife.
