I've heard of the process being done with the "S" series of steels too,the packing Idea is good,I agree I wasted alot of time dealing with wandering heat,absorbant paste works well to combat this,and will stay on in the water.A friend of mine uses a similar method and incorporates dry ice,2 blocks,in which he rests the knife.since heat rises and the spine is kept cool,migration into unwanted areas is kept to a minimum.
