Carbide is simple , it's a compound formed from a metal and carbon. Metals can be divided into weak moderate or strong carbide formers .Fe, Cr, Mo, V ,W, all form carbides while metals like Si , Ni ,Mn form little or no carbides in steel. Carbides are the wear resistant particles in steel so the higher the carbon content the more wear resistant .......Dendrite means 'like a tree'.A dendrite then is a crystal that has grown into the shape of a tree. In the winter moisture will sometimes freeze on a window forming large beautiful crystals , those are dendrites .When steel is made ,as the steel solidifies crystals of austenite are formed and since the cooling of large amounts of steel is slow the crystals grow into dendrites.Because of differences in solubility of the elements , the composition of the original austenite formed is different from the last metel to solidify. This segregation of alloying elements causes what is called alloy banding.
