forgable stainless?
Are there any good stainless steels that can be forged deciently and can be forge HTed more like carbon steels and low alloys? Something where long soak times at specific temps and special equipment isn't needed.

440C....kinda...sorta
Forge at high heat.....bring to critical and quench in oil...try tempering at 350F You can also give it a freeze in dry ice/acetone in between the hardening and temper. Kinda...sorta |

Not for all the time Roc, but some people I might give a knife to as a gift (like my folks) really have no buisness even looking at carbon steel.

Some people, like my folks, are uneducatable. I don't live in town to observe and scold them, so I wouldn't know they ruined it until long after it turned into a little rust stain in the dishwasher.

You know I'm just kidding Andy. Keep us informed on what you are doing. Ed Caffery knows some things about forging stainless. You might try giving him a holler.
