A couple observations:

1) You are going entirely too fast and if you keep doing that with your middle and ring fingers below the level of the stone you will cut yourself. Badly. Slow, firm strokes will do a much better job and put a better edge on without removing too much material.

2) Read the comments and look at some of the hundreds of other YouTube videos about sharpening with the Lansky. One of your viewers is spot-on that the last strokes should be into the knife (only) to develop the burr. In my opinion all the strokes should be into the blade. Going back and forth like you do does nothing except remove too much material from the blade.
