Sounds good. You need to, in my opinion, grind the screws down to the level of the stag, or whatever handle material you are using. Depth, after that is a personal thing. You can do it just barely toucing the stag ridges, flush, or well into the stag, to give it some shape and sculpture. Try them all, some handles lend themselves well to one procedure, others work better another way.
